Slices of fresh baked vegan peasant bread, delicious spreads and fresh, tasty toppings.
If you want to be adventurous, you should make your very own bread. It will taste delicious and fresh.
Vegan or not, avocado toast is probably on your radar. If you’re a millennial it’s likely one of your favorite things to eat and has even made its way onto your Instagram feed. #avocadotoast anyone?
When it comes to toast, the toppings are usually pretty basic and repetitive. Peanut butter & banana or plain avocado toast. Why stick to the same old toast ideas though? Toast doesn’t have to be plain and boring. Even when you’re vegan. Amp up your toast with these delicious vegan ideas from Emilie Eats.
Here are the best vegan toast ideas to make your mornings a little more interesting:
1. Banana Almond Joy Toast
This quick vegan toast idea is perfect for anyone who has a sweet tooth. Take your banana toast up a notch by adding almond, cocoa nibs and coconut flakes. You could even use these same toppings on a slice of vegan French toast. Yum!
If you don’t like using vegan dairy product you could substitute the non dairy yogurt with coconut cream. Ever tried whipped coconut cream? Add a dollop on top of vegan French toast for a healthy, mouthwatering breakfast.
Ingredients:
- 1 slice of bread
- 2-3 tablespoons of non dairy yogurt (or coconut cream)
- banana slices
- almonds
- cacao nibs
- coconut flakes
- toasted hemp seeds
Directions:
1.) Toast your slice of bread.
2.) Spread the non dairy yogurt or coconut cream onto your toast.
3.) Arrange banana slices and almonds to fit toast.
4.) Sprinkle the cacao nibs, coconut flakes and hemp seeds on top.
2. Vegan Caprese Toast
Caprese toast is one of my favorite things to whip up for a quick, healthy breakfast, lunch, or dinner. It’s especially good in the summer season when tomatoes are bursting with flavor. Wondering why all these recipes are topped with toasted hemp seeds?
Hemp seeds are a healthy, vegan source of protein. They’re packed with 10 grams of protein per serving! If you’re vegan or vegetarian and struggling to get enough protein in your life try adding hemp seeds to your diet.
Ingredients:
- 1 slice of bread
- 2-3 tablespoons of non dairy cream cheese (or coconut cream)
- 2 tomato slices
- handful of chopped basil
- sea salt
- black pepper
- sprinkle of hemp seeds
Directions:
1) Toast your slice of bread.
2) Cut tomato into slices and sprinkle with sea salt and black pepper.
3.) Spread the non dairy cream cheese onto your toast.
4.) Roughly chop the basil.
5.) Top your toast with the tomato slices.
6.) Sprinkle basil and hemp seeds on top.
3. Sriracha Avocado Vegan Toast
If you’re a fan of avocado toast you need to try this vegan avocado toast! Instead of just piling avocado slices onto a piece of bread this recipe adds a spicy punch with Sriracha and a tasty crunch with nori sheets. It kind of taste like deconstructed sushi.
For even more flavor you could sprinkle a dash of soy sauce on top. Sprouts are also in season right now, making them even more delicious. If you aren’t vegan and just love toast, try adding smoked salmon on top.
Ingredients:
- 1 slice of vegan peasant bread
- 1 nori sheet (seaweed)
- avocado slices (about half an avocado)
- sprouts
- sriracha
- sea salt
- sprinkle of hemp seeds
Directions:
1.) Toast your slice of bread.
2.) Place your nori sheet on top of your toast.
3.) Add the avocado slices.
4.) Sprinkle with sea salt and drizzle sriracha on top.
5.) Add the sprouts.
4. Fruity Peanut Butter Toast
This vegan toast idea is great for breakfast. Instead of just slathering peanut butter onto your toast and calling it a day, this recipe adds sweetness and a seedy crunch. If you’re looking for a little extra indulgence, top it with coconut cream!
You could also use a lot of these same toppings for another take on vegan French toast. Minus the peanut butter. Unless that’s your jam. Load up on the blueberries and dates to satisfy any sweet cravings.
Ingredients:
- 1 slice of vegan peasant bread
- 1-2 tablespoons of peanut butter (or almond butter)
- 7-10 blueberries
- sprinkle of pumpkin seeds
- 1 chopped date
- coconut flakes
- sprinkle of hemp seeds
Directions:
1.) Toast your slice of bread.
2.) Spread peanut butter.
3.) Line up blueberries diagonally.
4.) Sprinkle chopped dates, pumpkin seeds, coconut flakes and hemp seeds on top.
5.) Pesto Chickpea Toast
Here’s another way to make vegan avocado toast a little more interesting. Emilie Eats adds a zesty vegan avocado pesto and roasted chickpeas to make this toast idea anything but boring. Make a big batch of the vegan avocado pesto, you’ll definitely want leftovers!
This recipe is also loaded with vegan protein. The roasted chickpeas and hemp seeds make this toast hearty enough to be a full meal. It’s also a great post workout snack.
Ingredients:
- 1 slice of vegan peasant bread
- 2-3 tablespoons of vegan avocado pesto
- 1/4 cup of roasted chickpeas
- handful of chopped basil
- sprinkle of hemp seeds
Directions:
1.) Preheat oven to 425 F. Roast chickpeas for 15 mins and remove.
2.) Make yourvegan avocado pesto while chickpeas are roasting (or buy some!)
3.) Roughly chop basil
4.) Top your toast with 2-3 tablespoons of the vegan avocado pest.
5.) Add roasted chickpeas.
6.) Top with chopped basil and hemp seeds.
Finding good vegan bread for your vegan toast can be challenging. Being dairy free eliminates some of the key ingredients in delicious baked goods. No butter, no milk, no eggs. A lot of vegan breads on the market are dry and tasteless.
If you’re can’t find vegan bread that tastes like the real thing try this vegan peasant bread recipe by The Full Helping. All you need is flour, salt, sugar, instant yeast, water and coconut oil. The result is a (vegan) bread lovers dream come true.
